Healthy Summer Breakfasts




It’s summer and it’s hot here in Perth, WA. I don’t know about you, but when it’s hot I don’t really feel like eating much in the mornings so I’ve had to inspire myself somewhat because I know breaky really keeps me going until morning tea time. Here are four ideas that are quick and easy…oh and TASTY!

1. Overnight oats

There are a million different ways to do these and the only restriction is your imagination. They are also really great if you are low on time. Make them in individual jars to smash and grab on your way out the door. Eat in the car on your way to work (or train coz you take the train occasionally yeah?)

They’re super easy and great to use up leftover ingredients. Open your fridge and see what you have! For 4 small jars use 2 cups of organic oats, 1 Tablespoon of Chia seeds, 1 cup of milk (almond, coconut, cow, soy), grated apple or frozen berries, 2 Tblspn protein power if you’re that way inclined. Stir and divy up between your jars! Experiment. Here are 50 ideas to get you on your way and these ones are worth a try as well!

2. Chia Pudding

Another easy, portable breakfast on the go. I use my leftover chai tea in a small jar, add 1 Tbsp chia seeds, a lil vanilla powder, a lil cinnamon when I’m feeling spicy, shake and leave overnight. Cashew milk, chia and vanilla is another great combination! Pour into your bowl in the morning and add fruit and whipped coconut cream. Oh. Yeah. We stock Australian Grown, Australia Owned Chia Company Seeds and a range of different coconut product. Banaban is one of our faves.

3. Paleo Coconut Choc Granola

Replacing oats in this granola turns it into a paleo breaky fit for a queen! This tastes like CocoPops in a bowl. Super easy: mix 4 cups of coconut flakes with a bunch of tasty nuts and seeds that float your boat. We use pepitas, sunflower seeds, hemp seeds, buckwheat groats, almonds and walnuts. Mix through 1/4 cup good quality cacao powder and 1/4 cup coconut oil. If you’re a sweet tooth, give it a dollop of fructose free rice malt syrup. A grind of salt, a sprinkling of vanilla powder and a dusting of cinnamon powder to spice things up. Mixing it with hands is best here! Pop into your preheated 180degC oven until slightly golden! Cool. Eat. Easy.

4. Blueberry Paleo Buckwheat Pancakes

Again I Quit Sugar come up with the good for these tasty treats! These take a lil more time so perhaps a Sunday morning kinda dish but totally worth it! Again, we stock all the ingredients in store at Loose Produce. Buy a little, buy a lot.

Ingredients
  • eggs, lightly beaten.
  • 1/2 cup coconut milk.
  • 1 tablespoon coconut oil or butter, plus extra for frying.
  • 1/3 cup buckwheat flour.
  • 1 teaspoon baking powder.
  • pinch salt.
  • 1/4 cup shredded coconut, optional.
  • 1/4 cup frozen blueberries.
  • full-fat natural yoghurt, to serve.
  • extra shredded coconut, to serve.
Directions
1. Combine eggs, milk and oil in a mixing bowl.2. Stir in flour, baking powder, salt and coconut until combined. Fold through blueberries.3. Heat a generous amount of oil or batter in a frying pan over medium heat. Pour in some batter. When the surface begins to bubble, flip carefully and cook on the other side.4. Repeat, until all the batter is used.Serve with yoghurt and extra shredded coconut.

Summer Sunshine Vitamin C Boost Smoothie

Nothing worse than a summer cold hey?! I feel like everything is gaining speed as we hurtle towards the festive season. Work do’s, family, friends, shopping, food, my list keep getting longer I’m sure so I’ve felt a little like I need a boost of late. This works really well with a Vitamix blender because if you don’t have one the carrot is kinda in bits through your smoothie.

Ingredients

  • 1/2 carrot, diced
  • 1/2 peeled orange
  • 1/2 banana (frozen is great for the warmer months)
  • 1/2 cup raspberries (again frozen if you need to cool down)
  • generous spoonful of CoYo Yoghurt

Pop everything together along with a cup of filtered water or coconut water in your blender and blend until you reach your desired consistency. You might need to add a little more liquid depends how smooth you like your smoothies!

Iced Maple Coffee

As the temperature rises here in Perth the more ice blocks we’re adding to our coffee. Recently the gals have been sipping on these Iced Maple Coffee’s in store. Try swapping your milk for something a little different. We may have added ice-cream with a drizzle of maple over the top too! #sometimesfood

Ingredients:

  • one shot of freshly brewed coffee (or two if it’s Monday). We use locally roasted, fair trade beans by Backyard Coffee.
  • dash of organic maple syrup. We used strip by Honest To Goodness because it is authentic Canadian, organic syrup and owned by an Australian company.
  • coconut, almond or dairy milk. We make our almond milk fresh every Saturday and it’s available for you to purchase by the litre. Buy a little, buy a lot.

Method:

No great brain strain here. Pour it all in together and blend. If you have a vitamix the more ice you add the more like a slushy it will be!

Almond Milk: the facts

We’ve just started selling FRESHLY made Almond Milk available on Saturday mornings in store for $8/litre. The only thing we’re putting in our milk is almonds, filtered water and rice syrup. Which got us thinking about all the other almond milk varieties that are available out there and the nasties that can be hidden in them, emulsifiers being one of them.

So what are emulsifiers? In short, it’s an additive to make otherwise unmixable ingredients, blend together. Why is it bad? Some research suggests it causes a whole range of different digestive problems. We think your best bet is to either make your almond milk or purchase a reputable brand. Your guide to gut health



Gut Health

I’m sure by now you’ve heard the latest news in gut health and why it’s so important for the rest of your body to function. Improving your gut health has been proved to boost your immune system, eliminate toxins, reduce allergies, elevate your mood, normalise your weight and the list goes on! Upping your fibre intake can improve your gut health with products such as psyllium husks and chia and drinking bone broth. Eating fermented foods is another way! Fermenting terms such as kombucha, kimchi, kefir, jun are being dropped into more conversations than I can throw a cabbage at.

We spoke to Kim Veale from Organic Training Solutions and she took us through how to make Sauerkraut in your very own kitchen. She also showed us a bunch of other experiments on her kitchen bench including beetroot kvass! Check out the video…
